I wanted to try cupcakes again. And these Billy’s Vanilla, Vanilla Cupcakes have been on a couple of blogs as being just fantastic vanilla cupcakes. Okay, I’ll be honest, I’m not sure how vanilla cupcakes can compare to chocolate cupcakes as a matter of principle (I guess once in a while they are good), but it’s good to have a good vanilla recipe as a base for making more exotic ones like Caramel Apple cupcakes.
I made the coordinating Billy’s Vanilla Buttercream frosting and piped it on top which I think looks super cute and I will definitely do again. I made only half the recipe because I have no need for 30 cupcakes. A dozen is just fine and hard enough to get rid of as is (okay, they eat them like vultures at work, so not really).
I thought they came out a little dry but I think that was my fault. I was having a hard time getting the knife to come out clean so I think I left them in too long. I also didn’t have any cake flour and it calls for about half cake/half regular flour so I just used regular. So next time I will try with cake flour.
I thought the frosting was a little sickeningly sweet so I need to find another staple frosting. I think I still like mom’s best. Maybe it just needs some anise.
