For my fourth and final batch of marshmallows for the weekend I used the recipe from Cooking for Engineers which I had previously tried. Since I had already tried it before with decent success, I tried it this time with 1 tsp of almond extract and 2 tsp of vanilla extract (the whole recipe calls for 1 tbsp which is equivalent to 3 tsp). And this was definitely a success.
As I mentioned, I forgot to take pictures of the final items, but I do have this picture where I released it from the pan.
I made them kinda a brown/peachy/yellow color since they were supposed to be almond. See how nice and thick they look?
