I just picked up this book, On Food and Cooking: The Science and Lore of the Kitchen by Harold McGee. I’m looking forward to reading it and learning from it. Hopefully it well help me to become better at creating my own recipes once I understand why things work better.
As I went searching for a picture of the book, I found that the book is on Google Books here. So, I didn’t need to buy it although I find that it’s always nice to have a hard copy of nice encyclopedic books. But you don’t have to buy a copy if you don’t want to. I should check out Google books more often.
