I’ve decided to start a new item called “Food Friday.” I enjoy posting about food related items because I find they are often somewhat crafty in sort of creating an edible craft. But I’d really like this blog more to be about sewing and crafts. So I’ll stick to doing food items only on Fridays from now on.
My white eggplant plant this year yielded two eggplants. They were both delicious. Above you can see one still on the stalk. Hopefully I will get more next year as the plant matures if I can manage to keep it alive through the winter. Not sure yet how to do that, but we’ll figure it out as we go along.
The eggplants are ripe with they are turgid and shiny. I just used kitchen shears to clip the spikey stalk attaching it to the plant.
Then I sliced it up into approximately 1/4″ slices.
And fried them up with some olive oil and salt.
I finished up by adding them to my pizza for dinner (or flatbread in my case since I don’t use cheese on my pizzas). This was a great way to enjoy my eggplant as the flavor really came through on the pizza. Delicious!
